Easy Creamy Chicken Tacos Recipe

The flexibility of this easy chicken taco dinner dish cannot be overstated enough – you can make these in the Crock Pot, Instant Pot, or on the stove!

Equipment Needed to Make Easy Creamy Chicken Tacos Recipe
This easy dinner recipe is so versatile, you get to choose how you’d like to prepare it! Utilize the Instant Pot, the Crock Pot, or a stock pot stovetop if you wish!

Ingredients Needed to Make Easy Creamy Chicken Tacos Recipe
To make this Easy Creamy Chicken Tacos Recipe, you will also need the following ingredients gathered and ready:

How to Make Easy Creamy Chicken Tacos
NOTE: There are three different ways you can prepare these Easy Creamy Chicken Tacos that’s outlined in great detail in the printable recipe card below, but for the sake of not making this recipe eleventy-billion pages long LOL I’m going to show you the steps I took to prepare it utilizing the stove top/stock pot method (although I did prepare it in my Ninja Cooker which has stovetop settings lol)
Spray your pot and place your chicken breasts inside.

Turn the heat to medium-high.

Using some of the taco seasoning, generously sprinkle your chicken breasts with the seasoning.

Ensure both sides of the chicken breasts are thoroughly covered.

Add the minced garlic and frozen onions and peppers to the pot, mix thoroughly and cover with the lid.


Set this temperature to medium-high and cook for about 10 minutes, then flip your chicken breasts.

Continue to cook your chicken breasts and onions/peppers mixture flipping constantly until the chicken is fork tender and begins to fall apart.

Once your chicken is cooked thoroughly, remove one breast at a time to shred. For the best possible shredded chicken ever (and easily), I prefer to shred using my Blendtec but you can use a hand mixer or two forks, whichever you’d like!


While shredding the chicken, drain most of the liquid from your pot using a colander, reserving some in a bowl in case it’s needed again later.

Once all your chicken breasts are all shredded, return the shredded chicken to the pot and blend well with the onions and peppers remaining.

Add your cream cheese to the chicken mixture and mix well.

Important note at this step: As you mix the cream cheese chicken mixture, if you find the chicken mixture seems like it might need a bit more liquid to make it easier to blend, this is where you might want to add back in some of the broth we set aside!

Add your remaining taco seasoning packet and mix well, then add to this mixture the other seasonings and taste test to determine how much more of the spices are needed.

From here, continue to stir well and season accordingly to taste.

Serve with your favorite taco fixings and tortilla chips and enjoy!

Using 2 packages or 1.5 cups of taco seasoning, generously sprinkle your chicken breasts with the seasoning, using only about 1.5 cups or 2 packages. Ensure both sides of the chicken breasts are thoroughly covered.
